What is monosodium glutamate (MSG)?

MSG is a factory created flavor enhancer and used as food preserver as well as to bring out and retain flavor in processed foods.

MSG is used by restaurants and can also be found in most processed soups, stews, meat based sauces, salad dressings, processed meats, frozen entrees, ice cream, frozen yogurt and snack foods. It is also used in low fat foods to make up for flavor lost when fat is reduced or eliminated

MSG is thought to increase obesity and to increase insulin resistance and should be avoided by diabetics.

MSG is in almost every bottled, bagged, frozen, or canned processed food on super market shelves. But since MSG is often a component of a formulation, it is not labeled as such. You've seen words like autolyzed yeast, hydrolyzed protein, and whey protein. Each of these substances contain a percentage of glutamate, the harmful component of MSG.

MSG caused headaches and other reactions are from excitotoxins. The main ones are monosodium glutamate (MSG), aspartame, and L-cysteine.

A new European study concludes that MSG and aspartame in combination with food colorings cause even more harm to nerve cells than each of the additives alone. 

Scientists in Spain have concluded that MSG may cause obesity.  They found a 40% increase in appetite in mice given MSG

........mice also became grotesquely obese following administration of free glutamate acid. The vulnerable hypothalamus in our brains regulates weight control.
