The understand diabetes course would say that if you understood that the fast digesting refined flour and sugar etc cause a high flood of sugar that exceeds normal blood handling capacity.
Your body has an emergency system to produce high insulin levels that force muscles to absorb the extra sugar. This kept your blood from becoming syrupy and thick from too much sugar.
After 40 years or so of this your muscles were not in a position to absorb it fast enough any more and it floods over into your blood stream.

This is basically the problem, (your auto control system has gone a little wacky too which is another story) and to keep from doing serious body damage (referred to as complications) such as kidney problems, going blind, loosing nerves in feet etc you have two choices.
Either lower your sugar peaks by slowing digestion some with lower sugar foods and take medications to slow down digestion, make more insulin etc.
The other choice is to learn to control your diet and we give you pro and cons of both of theses methods.
Once you learn how all this works, then you can decide how you want to handle your diabetes or how you want to let it handle you, because it will.
